Mark & I tried the tasty, very addictive kombucha from the raw guys in Montreal this summer. We were invited to the launching of Crude Essence - a new raw catering & kombucha business that had recently opened up. It was fun to get away for a night out and mingle with Montreal’s raw community over dinner. Dinner and kombucha. Lots of it. Now I’ve tasted kombucha over the years and found only a few I truly enjoy. Crude essence is definitely one of them. Especially the elderflower flavour.
We hung out at the party awhile and after the boys showed us their fermenting room & impressive large vats, Mark & giddily returned to Ottawa with a few big bottles of bubbly. A month later or so, the boys returned for the SimplyRaw Festival. Their booth — Crude essence — was a huge success and they sold out of food within a few hours. We, of course, managed to bring a few more bottles home for our collection of bubbly in the basement.
A few weeks passed, and then one night as I was heading downstairs to my sauna, I smelled something peculiar. It reminded me of a pub the morning after… you know, that stale alcohol smell…. I then spotted liquid on the floor and thought the furnace blew. Luckily Mark was home and it didn’t take him long to figure it out. That splattered brown glass definitely gave it away.
Explosion #2 occurred when Mark was working at home. It was supposed to be a productive work day. The explosion came loud and sounded like a gunshot. Mark knew immediately. He went downstairs with a bucket of warm water and stayed awhile. Quite awhile. So much for desk work.
This week, I brought the last & very precious bottle upstairs from the basement. Looking back, I realize that I was asking for trouble, but hey, I wanted the bottle close by.
I stored it in the pantry and reminded myself to remove the cap every day to let some pressure out. I remembered to — the first day. Then, on Thursday morning I went downstairs to make Mischa’s breakfast and oh, what a sight… glass absolutely everywhere – it even made it all the way to the bathroom and dining room! That kombucha is powerful stuff. It really made me question how good it is for our insides. In any case, I cleaned the pantry out (it took me a full day!) and I’ve returned to my rejuvelac. Although it isnt bubbly like kombucha, it’s a lot safer.

- 1 liter of green smoothie (spinach, dandelion, sunflower greens, pear, chia)
- cabbage rejuvelac
- 1 large bowl of marinated kale salad
- 1 bowl of sauerkraut
- small glass of chocolate supershake
- piece of apple crumble that we made at today’s class
